Quick & yummy beet hummus recipe

Hummus is such a versatile spread, which can be used as dip, on your sandwich or in Vietnamese-style summer rolls :-)

And then you have the beetroot. It may not be the most commonly used vegetable in the kitchen, but it's delicious if you know how to prepare the beetroot. Beets have a natural earthy taste, or should I say that it really taste like dirt? ;-) To balance out the dirt-taste, you simply need sour ingredients such as lemons and sour apples.

Before we start, did you know the following about the beetroot? :-)

  • Beetroot fiber has shown to increase the level of antioxidants and the number of white blood cells.1 In other words, eating beets may improve your blood flow. Runners as an example drink beet juice to boost their endurance and to increase their performance overall. 

  • Beets contain nitrate that lowers the blood pressure, and one of the vegetables that may fight heart disease.2

  • You can eat the beet greens which are rich in iron, calcium and vitamin A and C. 

I've used polka beet in this recipe, but you can also use the recipe for red beets and golden beets.

The main visible difference will be the color.

Polka beet hummus tends to turn pinkish, while red beet hummus will become red/dark pink and the golden beet hummus will turn yellow. I also think that the red beets have a more pungent taste than its relatives.

Have in mind that red beets may leave red splatters on yourself and on the walls, so use an apron and scrub off while you're waiting for the beet to get roasted in the oven ;-)

Enough chit-chat, here's the recipe for beet hummus that is ready in less than 30 minutes:

Ingredients:

  • 1 large beet (about 375 g)
  • 1 box chickpeas (about 290 g)
  • 4 tbsp tahini
  • 2 lemons
  • Fresh thyme or 1 tbsp dried thyme
  • 1 tsp cumin powder
  • Chevre or any goat cheese, 50 g
  • 4 tbsp olive oil
  • Salt and pepper

Directions:

  1. Pre-heat the oven to 200°C

  2. Wash, peel and dice the beetroot 

  3. Spread the beet on an oven tray and roast them until you can stick a fork through the beet (about 10-15 minutes). Another way of preparing the vegetable is to cook it, but it's my experience that roasting beet preserves its delicate color.

  4. Wash the ready-to-use chickpeas

  5. Mix all the ingredients together in a blender or food processor. Squeeze the lemons and add salt and pepper to your liking. If you're using fresh thyme, strip the leaves off their stems. Btw, thyme goes very well with beets, but you can also use basil, chives or dill :-)

  6. Pulse until the mixture turns creamy and smooth.

  7. Sprinkle extra goat cheese on top and serve with raw vegetables or salty crackers.
